This course is a 2 days intensive chocolate making course. It will cover Pralines, Bon Bons, Ganaches, Caramels, Fudges and much much more…

LIST OF THINGS WE COVER: 

  1. A quick revision of Tempering of White Chocolate, Milk Chocolate and Dark Chocolate
  2. Understanding the Bean to Bar Concept (theoritical) 
  3. Use of additives in chocolates and fillings, increasing the shelf life. 
  4. Professional finishing techniques – from making the shells and locking them 
  5. Use of texture sheets and transfer sheers- correct procedures of their usage 
  6. Spraying techniques 
  7. Enrobing Activity 
  8. Rolling out Truffles 
  9. Tastings of various origins of Chocolates 
  10. Chocolate Beverages – one hot and one cold 
  11. Learn to make unique infusions 
  12. Home and Commercial Production Process (theory)  

We will include Flavours:

  1. Mandarin Pate de fruit
  2. Flavoured Ganache
  3. Flavoured Praline
  4. Cheesecake Based
  5. Chocolate bar
